Potatoes

Potatoes / onions / bacon or ham / seasonal vegetables

Peel and cut up your onions and potatoes, mix with olive oil, salt, and pepper a few pieces of cut-up bacon or ham. Put it into a baking dish and bake. When the potatoes start to soften, you can add green beans, asparagus, peas, broccoli, zucchini.

If you have root vegetables such as carrots, parsnips, celery root, you can add those early on to the potatoes, but the above green vegetables need only a few minutes of baking.

I have been know to pour a few tablespoons of white wine on it as well as adding a little pesto at the end.
