
Add Beans or Lentils
Whenever I need a little more substantial meal than what I think I've got, I add beans, lentils, garbanzo beans, or split peas.
- Add beans to a vegetable soup for an "almost" minestrone
- Add lentils to rice with carrots and celery, this goes well with tomatoes
- Add garbanzo beans to couscous for a basic Mediterranean recipe (onions, tomatoes, flat leafed parsley, olive oil, cumin, salt, pepper, lemon, dry apricots; cut up your ingredients, cook the onions and apricots until soft, add spices, tomatoes, garbanzo beans, parsley, and cook for five minutes)
- Add to green salad with Balsamic vinegar and tomatoes
- Serve pasta with tomato (red) sauce or pesto (green) sauce, add beans
