Even when you plan what food you have, you will face food emergencies. It is one thing to know already that you will have no time to cook on Tuesday, and it is another one altogether to miss schedule, having to rescue someone or something from another crisis (taking a child to the emergency room, anyone?) and entirely missing the opportunity to prepare food. You can overcome these by thinking about in advance:
- Use what is in your pantry - quick cans - cans or pasta with pesto - this is also what I do when we return from traveling and the fridge is empty.
- Freeze a portion of soup in the freezer, only needs warming up. Since I have become disappointed by the chicken broth in the the store, every other weekend or soI cook a huge pot of chicken soup, and I freeze the broth and one container of soup with the chicken / vegetables for emergencies.
